Rustic Levain Sourdough

This rustic loaf is our flagship bread made from organic flour and natural levain. With an open crumb, thick crust and creamy caramel color, the Rustic Levain Sourdough imparts a rich, nutty flavor with a gentle tang.
We are sourcing from Janie's Mill based out of Ashkum, IL. This mill and grower has some of the best flours in the Midwest, and is dedicated to organic and responsible farming.
By using traditional stoneground methods, Janie's Mill flour leaves in all components of the wheat (Bran, Germ and Endosperm), where conventional methods break the wheat down and separate them - leaving a flour primarily made form the starchy endosperm.
